      This morning I woke up& felt ambitious, so I thought I’d do some more of my holiday baking! I had done a little over this past weekend, but surprise, surprise, most of it’s all gone already!I had made about 8 dozen sugar cookies,& a pumpkin & a cranberry bread & I made the mistake of not hiding some of it. I was going to put the breads in the freezer but I didn’t, & I had divided the cookies into 3 Christmas tins to give as gifts.My Bad! Everything is gone.I guess thats what happens when you live with the Cookie Monster, aka my Son ( his friends & sister helped eat them too). So anyway, today I’m going to make some pizzelles. Pizzelles are very thin waffle cookies & you use a press to make them. Years ago I learned to make them from my first husband’s Mom, she was Italian & it was a traditional Italian cookie for the Holidays in her house. She would make a batter, usually lemon or anise flavored, & pour it into this little 2 sided press & old it over a low flame on the stove.I have to tell you, I thought she was nuts! You could only make one cookie at a time this way & someone usually ate it before it cooled.It was a true labor of love on her part,but once I tasted one I understood why she did it. They are really delicious!She also taught me to make zeppole which are fried pieces of sweet dough that you sprinkle with powdered sugar. During the holidays she would skip the powdered sugar, arrange the cooled zeppole in a cone shape on a plate & pour honey over them.Then she would put sprinkles all over the cone & it ended up looking like a little Christmas tree.It was the centerpiece on the dessert table & everyone loved it.So 33 years later I still make them both as part of my Holiday baking. The zeppoles I still make the same way,but the pizzelles, Thank God! are much easier to make now because you can now use an electric press. Its like a waffle iron,you pour in the batter, close the press & when the light goes off you take out the cookies out with a spatula.When they cool off you sprinkle them with powdered sugar or they come with a mold that you can bend them around like a cannoli and fill them with whatever you want. It takes a little practice but you get the hang of it pretty fast.I have 2 irons to make them with. One makes 2 cookies at a time, & the other makes 3 smaller ones.They look like snow flakes & make great gifts. Go easy on the powdered sugar though or you will choke, I speak from experience!Years ago I used to give them to my kid’s teachers every Christmas & even when my kid’s moved onto the next grade the teachers from the previous year would hound me to make them some, they are that good!I still make the traditional flavors but I also make Pumpkin, Chocolate, vanilla, & almond ones now.Even with the electric irons its still a lot of work but I usually get an assembly line going with my daughter & her friends to help me & it goes much faster. Usually everyone & everything in the kitchen is covered with powdered sugar but we have a blast doing it! If you are interested in making them you can find a press online.I had one that I bought in Sam’s years ago for $25 but I had to replace it a few years ago & upgraded to better ones. I have one thats made by a company called Cucina & the other one is from a company called Prego.It was under a $100 for both of them at the time & well worth it!The way they make them now, they will last for years if you take care of them & they come with recipe books.You can also go online & find hundreds of recipes & figure out which ones appeal to you most.They are a tradition in our house & everyone looks forward to them every year.Like I said earlier they make really good gifts.I usually put them in a pretty tin with some foil & a bow & add a package of tea or a flavored coffee.They are not expensive to make but people really appreciate the effort I put into making them.So if you like to bake like I do, you should check it out.Maybe it will become a family tradition in your house too!So I gotta go & get started. Maybe I can get enough done & hide them before the Cookie Monster gets home!As always, Peace to you & yours!
